Greek Chicken Meatballs with Tzatziki and Veggie Bowls

Ingredients 

Greek Chicken Meatballs Ingredients

  • 2 lb ground chicken
  • 1/4 cup red onion, finely diced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • 1.5 tsp sea salt
  • 1 tsp dried oregano
  • 1 tsp dried dill
  • 1/2 tsp chili powder
  • 1/4 tsp pepper
  • 4 garlic cloves, minced

Tzatziki Ingredients

Bowl Ingredients

  • 4 cups cooked brown rice
  • 2 cups Uno BitesTM Nano Cucumbers, diced
  • 2 cups grape tomatoes, diced
  • 1/4 cup red onion, thinly sliced
  • extra mint and parsley for serving/garnish

Instructions 

  • Preheat oven to 400 degrees F and line a rimmed baking sheet with parchment paper.
  • To a large bowl add all the meatball ingredients and mix well. Using a spoon or cookie scoop, form meatballs using about 2 tablespoons of mixture per meatball. It will make around 29-30 meatballs. Place the meatballs on the prepared baking sheet and bake for 15-18 minutes, or until fully cooked through.
  • Add all the tzatziki ingredients into a food processor and pulse 4-5 times until the cucumber is broken into little bits and the sauce is looking smooth.
  • To build the best flavorful bowls featuring greek chicken meatballs, crunchy veggies and fresh sauce, here’s what you do. Add rice to your bowl. Add 4-5 greek chicken meatballs to your bowl. Next, add the vegetables. Lastly, load up on the tzatziki sauce. Extra herbs are always welcome!
